Italy released a ‘red book’ of food products of Ukraine

The Italian University of Gastronomic Sciences has released the atlas “Ark of Taste in Ukraine,” which contains information on food products that may disappear. Ukrainian chef Yevhen Klopotenko wrote the foreword to the food catalog and shared the link to the atlas in his Facebook post.

Researchers have collected over 80 examples of plants, animals that eat them, finished products, and dishes in danger of extinction. The second volume of this book is planned to be published in the future.
